I hit this same problem, although less serious in my case as the system is
still bootable. I agree that the installation should have copied the
"kopt=" settings from /boot/grub/menu.lst. It should also have informed
the installer (e.g. in a NEWS file) that they should check the options
listed in the GRUB_CMDLINE_LINUX_DEFAULT setting in /etc/default/grub
before rebooting.
