Thx. That does the trick.
Still, I believe it to be unsuspected and bad behaviour that update-grub
simply breaks when using a normal documented feature of grub-install.
It should adapt it's paths accordingly, IMHO.
And there definitely should be a little documentation about the basics
of getting this package running.
As a side note:
The whole installation becomes a little more difficult when
installing from an MBR bootet system and then trying to convert to efi.
Then grub-install fails in different places (doesn't detect efi and doesn't set up
the paths correctly, naturally efibootmgr doesn't work, etc.) and this is why I used
--boot-directory in the first place this way.
But now I suggest this bug to be set to "wishlist".
Wishlist for some basic documentation.
