I'm not sure this is the same bug, but it's probably related.
Squeeze, and now wheezy, can't find grub's splash screen or
international fonts during installation, if they are on encrypted
partitions at that time (I noticed this behavior on all laptops I
installed squeeze or wheezy on).
If grub-pc is re-configured after first boot, the splash screen and the
font are copied to /boot. Running update-grub or grub-install wasn't
enough, I had to dpkg --reconfigure grub-pc to make it work.
Since OP's partitions are /dev/mapper/XXX, much like a classical
encrypted setup (LVM inside a LUKS partition), I think both problems may
have the same origin.
