I have to ask: *why* are you trying to force the ESP to be /boot
rather than /boot/efi, the default for Debian setups? At the very
least, you will see problems using a FAT filesystem for a location
where dpkg tries to install things - it expects to use filesystem
semantics that FAT cannot provide.
