Status update...

Pandoc 1.11.1 doesn't fail:

  $ pandoc -o dice.pdf --latex-engine xelatex dice.mdwn

...but the output has the dice characters garbled :-(

Forcing the use of a font known¹ to include dice doesn't help:

  $ pandoc -o dice.pdf --latex-engine xelatex -V mainfont=FreeSans dice.mdwn
