Alas I don't use sbuild. However, you could:

 * Use a container system (such as Docker) and just tcpdump the entire
   ethX interface. I currently use this technique.

 * nsntrace 0~20160806-1, currently in sid. I plan to move to this once
   it migrates to testing.
