Ok, this is because it was a bug in dpkg which was fixed yesterday...
(it was related to DEB_VERSION_UPSTREAM, which you use in debian/rules).

If you still want to reproduce the bug, try building your package in trixie
right now, as the dpkg fix has not propagated to testing yet.
