QT target version for trixie

Qt6 and KDE frameworks 6 packages are hopefully more consistent with each other and predictable… but not always similar to their qt5 equivalents.

You can get inspiration from :
- KDE Gear packages already built against Qt6 : ark [1], kcalc
- Any kf6-* package
- Plasma 6 packages

These are all in their debian/experimental on Salsa.

Also feel free to join us on the #debian-qt-kde IRC channel on OFTC where several active packagers are present.
