Well, you could just delete the file in the rules file but I think
that's somewhat an ugly hack IMHO. However, looking at the current
rules file [1], it's already done anyway, so you might just go ahead
and add another line deleting the .convert file under install/mate
media-pulse::, e.g.

rm -f
debian/mate-media-pulse/usr/share/MateConf/gsettings/mate-volume-control.convert.
