The worst is to have contributors work with the old repository. So
either it's removed, a new commit is appended to all branches with a
single file that says "Relocated over there", or a symlink as you
suggest.

I think the symlink could trap contributors, as collab-maint access
and pkg-mozext access rules differ.

I usually find source repository for packages by looking at
packages.qa.debian.org, and it's the most recent version that matters
there, IIRC. So simply removing the previous address would not feel
like a huge problem to me.

Feel free to do what feels right to you, but the previous repository
should really not left "as is".
