OK. Could this be done by adding [!hurd-i386 !kfreebsd-amd64 !
kfreebsd-i386] to the deps of libquicktime-dev (as in the build-deps)
instead of variable substitution?

Well, that's also tricky. All the packages I tried to build did succeed
(e.g. transcode). I asked the maintainers of all the rdepending packages
to test-build their applications against the packages in experimental,
but you cannot be sure that everyone actually followed this advise...
