Well, at the time of your writing, ffmpeg in unstable and experimental 
had implemented two completely different concepts with regard to the 
creation and compilation of unstripped ffmpeg source code. So it would 
be very helpful if you could at least tell us the actual version you 
are using.

What's this in English? Are there some more error messages before or 
after these lines?

Have you recreated the tarball with the same DEB_BUILD_OPTIONS before?

Please use the Debian BTS for reporting bugs and provide some more 
information about the package version you are actually using, the 
steps you have already taken, which "fixes offered using unstable or 
experimental" you refer to and what exactly caused the build to fail.
