you really should build your package on *current* sid.

now sid is unstable, and it's called unstable for a reason. so you
*might* not want to upgrade the machine you are doing your everyday
work on to a fast moving target like sid.
this is, why itis recommended, to do that actual build process in a
pbuilder chroot environment, that bootstraps a minimal sid¹
environment to build the package. doing so ensures
- - that you link to the proper libraries (as found in current sid)
- - that you can guarantee that your package builds with the current
(sid) toolchain
- - that you can guarantee that all your build-dependencies are sufficient

you can also setup a virtual machine (virtualbox, qemu,...; or even
lxc) to build and *test* your packages (though esp. in the realms of
multimedia packages youmight only be able to run basic tests).
i usually do that only when trying to fix problems on more exotic
kernels, like Debian/kFreeBSD on Debian/hurd.
