No need for defending the changes - they are clearly all progress :-)

Where you might need defending/clarification is (when package is in
stable, and) when you want to do a stable update: Then you want to argue
your case towards the release team, which is (for good reason!) hesitant
to introduce changes to the stable branch of Debian.

What did you try?

Wild guess is that you out it in wrong file - it should be file
debian/netatalk.lintian-overrides

Bundling OpenSSL is a no-go for Debian: Too risky a library to "hide" by
embedding it.  So I cross my fingers that you will succeed in getting it
to work with WolfSSL.
