libgl1-nvidia-glx postinst should display a debconf note about a
mismatch of the loaded kernel module and the driver being installed ...

if it's a debconf problem, the next time you run into it, try

export DEBCONF_DEBUG=developer
dpkg --configure --pending

and if it's not a debconf problem, insert 'set -x' at the beginning of

/var/lib/dpkg/info/libgl1-nvidia-glx:amd64.postinst and run
dpkg --configure --pending
