These are from buster-backports, nothing that should concern you if you
use bullseye and bullseye-backports.
These versions are currently available:

nvidia-settings | 510.73.05-1 | experimental/contrib | amd64, arm64
bullseye-backports currently has version older than bullseye itself,
that i snot problem, on upgrades you should automatically switch to
the bullseye version.
This version skew will change once the 510 series moves to sid (and
bullseye-backports).
