hmm, the quotes around format values are used by the shell. Internally, the 
loader function will receive this command:

  source format=3.0 (quilt)

Hence the error message.

You must add single quotes to protect the double quotes, either:

 $ cme modify dpkg 'source format="3.0 (quilt)"'

or:

 $ cme modify dpkg source 'format="3.0 (quilt)"'

Both will work as expected.

I'll keep this bug open as a reminder to fix the doc.
