I think this is due to the way the links are rendered in general.

To achieve your goal you would need to use the following:
mailto:debian.axhn at manchmal.in-ulm.de[Christoph Biedl]

instead of:
Christoph Biedl <debian.axhn at manchmal.in-ulm.de>
