This problem started  in the stable version of samba and when upgrading to testing it become worst.

Sometimes these processes arrived to several GB f memory and server collapsed.

Some of these processes weren't reported by smbstatus -b and it was imposible to find a trace on log files (loglevel = 1 ), but if they were killed with smbcontrol <pid> shutdown, then they log its shutdown

The use of "reset on zero vc = yes" mitigates the problem, maybe because some of theses processes are killed.
