As said before, the solution is to mask smbd, nmbd and winbind services:
sudo systemctl mask smbd nmbd winbind

The proper solution would be to better document how to move to
samba-ad-dc, AND to automatically mask those services on upgrade when
"SERVER ROLE = ACTIVE DIRECTORY DOMAIN CONTROLLER".
