Yeah and patch their build system. Even if it's just for OSX/Windows
specific changes, I'd expect a similar situation in other software
where people either need to patch build systems or update their SDL
version.

FWIW, they even describe there how to update SDL on Ubuntu. And Ubuntu
also had 2.0.2 since almost forever. So there's probably a reason.

I just have my own version of the package since a while now, simple
uupdate and rebuild. Works for me.
