This bug report sounds very strange.

Matt, could you try to strace the nm-applet resp. NetworkManager process when
that happens. For bonus points, run the nm-applet process in a debugger and then
trigger the freeze, so we have a clue, where/when in the code that problem is
triggered.

Do you have anything suspicious in the log files: ~/.xsession-errors,
/var/log/messages,syslog,Xorg.log etc.
