It could be a bluetooth regression, I would suggest to try the latest version
of pipewire since 0.3.65 is quite old now. As soon as the bookworm-backports
repositories are open, I will upload a newer version of pipewire + wireplumber.
Once you can reproduce this issue with a more recent version of pipewire,
it is worth opening a bug upstream at:

I asked because some users use the deprecated pipewire-media-session
session manager instead of wireplumber.
