Rolling back to 1.0 fixes this. On the same machine, a testing/unstable installation with wireplumber 0.5 + pipewire 1.2 + the same kernel has no issues. Apparently then, it is the pairing of wireplumber 0.4 + pipewire 1.2 that is not working properly. Since bookworm-backports is already providing pipewire 1.2, I would like to ask you to backport wireplumber 0.5 to stable in the hope that this will fix the issue.

I don't have any issue here with pipewire 1.2 and wireplumber 0.4
on Bookworm. I guess your issue comes from something else?
I am still hesitant to backport wireplumber 0.5 because of the format
change of its conf files, this will break users' configuration.

Best regards,
Dylan
