I have personally no strong opinion about Jabber vs XMPP. But I
suggest you just make the necessary changes and file bugs about
the respective packages with the diff attached. Maybe the term
Jabber could still be mentioned in the long description, e.g.
"Foo is an instant messaging application for XMPP (Jabber)..."
Just in case somebody still searches for Jabber.

When you are at it, maybe you have some ideas on how to improve
the package descriptions in general? For example, Gajim is
advertised as "GTK+ based", but the UI library is a technical
detail, that should not be part of the short description IMHO.
Maybe not even in the long one. Another example: Psi is called
"free", but that's redundant, because Debian is a free OS and
all packages in main and contrib are free software.
