I mean that all mounted filesystems, on MD RAIDs and ZFS RAIDZ2, are
inaccessible, with system load in the thousands, which indicates that
there is a lot of processes in a "D" status.

The production environment is buster with zfs from the backports, and a
custom 5.4 kernel.
While executing the reportbug program on a test server, I was advised to
test the latest release. So I installed zfs 2 from testing (stable APT
Pin-Priority: 900, testing: 400). I then checked if the trim cron was
still present, and implemented in a similar way.
I would not use that in a production environment indeed, thank you for
noticing.
