Rafe,
You could try this search: find /usr -name libsane.s*
it may take a few minutes to finish, but should find all your sane
backend installation directories.
On a live DVD of ubuntu 14.10 sane seems to be in /usr/lib/x86_64-linux-gnu
Also run: scanimage -V
That tells you which version of sane is actually running. If it gives
you version 1.0.24 that's the original ubuntu version, not the one you
have compiled.

Says something about how to specify which installation of sane is used.
