My *personal* opinion: probably 7.4 or even 7.5. I would follow the Sage 
betas (not the stable release) in the development of your Debian 
package. Only when you have something which really works, then decide 
which version you go for.

I know that is a moving target, but it gives a chance to work with 
upstream and perhaps get a few fixes that you need in Sage itself.
