Hello Arnaud,
Problem is that I don`t have upsd and upsmon, I downloaded latest version 3 day before from homepage. In bin folder I have:
upsc upscmd upscode2 upsdrvctl upslog upsrw upssched-cmd
And /etc/hosts is:
127.0.0.1 optimus optimus.galaxy localhost

This question still stand.
To complete Charles answer, to fully start nut, you must call:
$ upsdrvctl start
$ upsd
$ upsmon
The latter being optional for upsc, but mandatory for protection.
A last hint: are you 100% sure that localhost resolves to 127.0.0.1?
Try pinging localhost, or check your /etc/hosts...
Or simply call 'upsc mustek'
