Offlineimap uses openssl through the bundled and externally developed imaplib2 library, so this is something that would have to be done there.
Also, gnutls is not a drop-in replacement afaik, so it might not be simpler. Also, openssl is part of stock python but not necessarily installed on all systems.
Personally, I believe switching to a nice and actively developed IMAP library such as "imapclient", is desirabable in the long run.
