I haven't looked at them yet but the source files there are 'native'
packages so the debian dirs are inside them, and any patches, if any,
are already applied.

Dom, did you use any patches? Can you recreate the packages as
non-native packages? For that you need to have e.g. a
sword_1.5.11.orig.tar.gz, which is a copy of the upstream tarball, in
the directory below sword-1.5.11. Then build the package. That will
show all differences to upstream in the diff.gz
