Well I did a small attempt and came down to me not knowing any java at
all and not being able to make any sence of the java packaging
guidelines.

Start reading from java packaging guide and if you can make it build a
little bit we will be able to help you get it in perfect shape. So far
the problem was that none of us are java people =)

I'm ok to mentor & help you out with general packaging bits as long as
you are willing to learn just the java packaging quirks. We use bzr to
keep our packaging and we use launchpad for hosting and building
packages for testing and backports. Our ppa's have a lof of users =)

On our team we have 2 Debian Developers which have been reviewing our
work & sponsoring uploads.

You can also take alternative route and keep jsword maintained with
java team which seem to be friendly people with experienced packagers
available for mentoring & sponsoring.

JSword is the missing bit in Debian and I'm sure many people will
appreciate it in debian / ubuntu and we would love to help you out in
packaging it.
