Normally you can select a whole word at once if you double click it; the whole
line, if you quickly click once more after that and the whole paragraph if you
do it one more time.

Evince does not react to two and more clicks. Selection is only possible via
dragging or [Ctrl]+[A]. Since the click selection is expected to work in every
application, this functionality should be included if not already done.
