I can confirm this issue and its resolution.

I got the same segfault about the same undefined symbol when I last
upgraded evince:

ii libpoppler-glib8:amd64 0.26.5-2
amd64 PDF rendering library (GLib-based shared library)
ii libpoppler46:amd64 0.26.5-1
         amd64 PDF rendering library
ii poppler-data 0.4.7-1
all encoding data for the poppler PDF rendering library
ii poppler-utils 0.26.5-2
amd64 PDF utilities (based on Poppler)

ii evince 3.14.1-1
         amd64 Document (PostScript, PDF) viewer
ii evince-common 3.14.1-1
all Document (PostScript, PDF) viewer - common files
ii gir1.2-evince-3.0 3.14.1-1
amd64 GObject introspection data for the evince libraries

The error message:

(evince:1962): EvinceDocument-WARNING **:
/usr/lib/x86_64-linux-gnu/libpoppler-glib.so.8: undefined symbol:
_ZN7GfxFont16getAlternateNameEPKc
Segmentation fault

also, manually upgrading libpoppler46 to the -2 version fixed the issue.

since the problem seems to be coming from the version difference between
libpoppler46 and libpoppler-glib8, this bug report might be more suited
to the library libpoppler-glib8, since that's the package that's
depending on libpoppler46
