Yes I made a mistake, I built the new version and then did apt-get
upgrade, and because I still had the old -dbg file it didn't upgrade.
Once I updated to the new -dbgsym version, all the other packages
upgraded as well.

Once I was running 0.30-3 pavucontrol definitely worked, and I'm pretty
sure empathy-chat is working now too.
