libgnutls-openssl27 is already in sid, it's not going away afaict.  If
you mean "stop building it from gnutls26, build it from gnutls28
instead" then that doesn't require NEW processing.

I'm also not sure what the intention is with libgnutls-dev.  Is the plan
to have it built from gnutls28 eventually, or keep it in gnutls26?
What's the "handholding" you refer to above?
