Upstream uses help2man to generate the man pages.

./configure --help
Program names:
--program-prefix=PREFIX prepend PREFIX to installed program names
--program-suffix=SUFFIX append SUFFIX to installed program names
--program-transform-name=PROGRAM run sed PROGRAM on installed program names
If you don't like to have that s,x,x visible in the scripts then please
make a patch and send it to grub-devel at gnu.org

Please do not report different things in one bug report.
And I even don't understand what you mean with that.
I just `rm -rf /boot/grub' reran update-grub and grub-install and I had
again ascii.pff in my grub.cfg and not unicode.pff
