The reason I chose "+deb11u1" is because "11" signifies the Debian
release version, namely v11 for Bullseye.
This aligns with the official policy for stable updates, IINM:

I found a recent write-up about the stable release process so this is
what I'll follow:

It talks about debdiffs and uploads that I guess I'll learn all about
by reading the aforementioned docs. :)
