[pkg-php-pear] Uploading symfony 5 to unstable

tl;dr: symfony 5 and related packages are ready, waiting for php-default
to be reverted to 7.4 for upload.

There are only a handful of packages involved (5.4 will also need a
Doctrine stack update, glad it can be decoupled). They are ready to
upload to unstable (from experimental), in that order:
(1) php-symfony-contracts
(2) php-symfony-mercure
(2) php-async-aws-core
(3) php-async-aws-ses
(3) php-async-aws-sqs
(1) php-twig (binary upload due to loop dependency with…)
(4) symfony
(5) php-twig (source upload)
(The number (n) means that stuff from previous levels need to be
available in order to be built).
Unfortunately, symfony can’t currently be built with php-default changed
to 8.1 without a proper transition. Ondřej wrote he “uploaded reverted
package” [#976811#205] so that should be fixed soon enough.
