[pkg-php-pear] Bug#976811: transition: php8.1

tl;dr: Bookworm will be released with PHP 8, there is a bunch of 
packages to fix.

Hi,

A year ago, the PHP 8 transition didn’t happen before the Freeze, and is 
not yet the default, but that should happen soon™…

PHP 8.1 is now the default in experimental, so we now have a view of 
some breakages thanks to autopkgtest:

As last year,

Likewise, for the PHP PEAR (and Composer) team, we have a fair amount of 
packages to fix or at least document via bug reports blocking #976811.

I’ll start by taking care of the doctrine packages, but anyone is 
welcome to dig into the issues (there is plenty enough for everyone ;). 
I believe the BTS is a fine place to document your findings (and 
patches), but feel free to use any other mean (salsa MR, mailing the 
list, a wiki page, anything)!
