Looks like ModemManager doesn't properly detect the SIM

When you run ModemManager, is wvdial active? Having both run a the same
time is probably not a good idea.

Can you also attach the output of (run as root)
mmcli -L
mmcli -m <number> (use the one from mmcli -L)
