new to asterisk and debian

I've just asked binfone.com to install a debian server for me and install
asterisk.   What configuration of debian and asterisk would be best to
achieve my goal of producing a series of reliable cellphone tours in
support of nyhistory.org museum exhibits?

By the way, I was dismayed to read the "unstable" repeated so many times
on http://packages.qa.debian.org/a/asterisk.html

As I am new to both debian and asterisk, please forgive my early requests
for guidance.
