uhm, you said it was a print server, the scanner is not a printer, so no, 
it likely wont work.
you could look at a device like the linksys nslu2, which is a cheap 
strong-arm based linux box. there is custom firmware availible at 
nslu2-linux.org but i dont think it includes sane yet.

disclaimer: i am involved in the nslu2-linux project, so i have some bias. 
there are other devices, asus wl-500, etc that are similar in concept, and 
may work as well.
