Here are my decisions so far. Please comment.

00_strict-aliasing.diff
Did not apply. Rationale: we're building with a newer gcc and should see
what effect this has. If someone can give an in-depth explanation of why
this is needed, please do.

01_maintainer_mode.diff
A candidate, but I didn't apply it yet because I'm not 100% sure that we
need it.

02_versioned_symbols.diff
Applied. Most needed.

03_saslauthd_mdoc.diff
Applied, better integration with Debian defaults.

04_missing_man_pages.diff
These man pages fit better into the debian dir, from where they can be
installed. Patching is not needed, IMO.

That's it for now. I'll continue later.
